
| Cheddar cheeses have a rich, nutty flavor that becomes increasingly sharp with age. Mild and medium cheddar have a creamy texture that melts well. As cheddar ages and becomes more crumbly, it melts better incorporated as an ingredient rather than melted on top of your dish. After aging for 12 years, the cheddar starts to regain a smoother texture. Mild cheddar is aged no more than 4 months. Medium is aged from 4 to 10 months. Sharp cheddar is aged for 10 to 18 months, with x-sharp aged for 18 months. These cheddars are priced per pound and available in any size you desire. |
